Le Houblonneux de l’Isle is a firm cheese made from non pasteurized cow milk exclusively coming from Isle-aux-Grues. Its smooth pale yellow paste is slightly acidulous with a fruity and yeasty taste. Its dark yellow rind is washed with L’Étoffe du Pays, a local beer de garde known for its dried fruit and herbal notes.
